Make crispy, spicy, and creamy Bang Bang Chicken Skewers using your air fryer. This recipe delivers the popular flavor without deep frying.

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tablespoon cornstarch
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup all-purpose flour
  • 12 wooden skewers (soaked in water for 30 minutes)
  • Cooking spray (non-stick)
  • For the Bang Bang Sauce:
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 2 tablespoons sriracha (adjust to your heat preference)
  • 1 teaspoon garlic powder
  • 1 teaspoon rice vinegar

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning in the air fryer.
  2. In a medium bowl, toss the cubed chicken with cornstarch, salt, and pepper until lightly coated.
  3. Place the flour in a shallow dish. Dredge each piece of seasoned chicken in the flour, shaking off any excess. This light coating helps create a crispy exterior.
  4. Preheat your air fryer to 380°F (195°C). Lightly spray the air fryer basket with cooking spray.
  5. Thread the floured chicken pieces onto the soaked skewers, leaving a small space between each piece. Do not overcrowd the basket. You may need to work in batches.
  6. Lightly spray the tops of the chicken skewers with cooking spray.
  7. Air fry the skewers for 10 to 12 minutes, flipping them halfway through the cooking time. The internal temperature should reach 165°F (74°C) and the coating should be golden brown and crispy.
  8. While the chicken cooks, prepare the Bang Bang sauce. Whisk together the mayonnaise, sweet chili sauce, sriracha, garlic powder, and rice vinegar in a small bowl until smooth.
  9. Once the chicken is cooked, remove the skewers from the air fryer.
  10. Brush or drizzle the cooked skewers generously with the homemade Bang Bang sauce, or serve the sauce on the side for dipping. Serve immediately.

Notes

  • For best results and maximum crispiness, do not skip the light coating of flour and the initial spray of cooking oil on the chicken.
  • If you prefer a thicker sauce, reduce the amount of rice vinegar slightly.
  • Chicken thighs can be substituted for breasts, but adjust the cooking time by 1-2 minutes as they are fattier.
