Instructions

  1. Preheat your oven to 425 degrees Fahrenheit.
  2. Scrub the sweet potatoes well under running water. Dry them completely with a paper towel; moisture prevents crispy skin.
  3. Prick each sweet potato deeply 6 to 8 times all over using a fork. This allows steam to escape.
  4. Rub the entire surface of each potato with a small amount of coarse salt and pepper. Do not use oil.
  5. Place the seasoned potatoes directly onto the middle oven rack. Do not use a baking sheet or foil underneath.
  6. Bake for 40 to 50 minutes. The exact time depends on the size of your potatoes.
  7. Check for doneness by squeezing the sides gently; the potato should yield easily. A knife inserted into the center should meet no resistance.
  8. Remove the potatoes from the oven. Let them rest directly on the rack for 5 minutes before serving.
  9. Slice open lengthwise and fluff the interior with a fork. Serve immediately with your favorite toppings.
