Make a rich, creamy, and flavorful salmon dinner with minimal effort using Boursin cheese. This one-pan recipe is perfect for a quick weeknight meal.

  • 2 salmon fillets (about 6 oz each)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 oz Boursin cheese (Garlic & Fine Herbs flavor), softened
  • 1 bunch asparagus, trimmed
  • 1 cup cherry tomatoes
  • 1 lemon, sliced

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy clean-up.
  2. Place the salmon fillets on the prepared baking sheet. Drizzle the salmon lightly with olive oil and season with garlic powder, salt, and pepper.
  3. Spread an even layer of the softened Boursin cheese over the top of each salmon fillet. This creates your creamy baked salmon topping.
  4. Arrange the trimmed asparagus and cherry tomatoes around the salmon on the baking sheet.
  5. Place the lemon slices on top of the cheese or around the vegetables.
  6. Bake for 12 to 15 minutes, or until the salmon is cooked through and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
  7. Serve immediately for a simple salmon bake.

Notes

  • For a richer flavor, you can add 1 tablespoon of fresh chopped parsley over the finished dish.
  • If you prefer a lower carb baked salmon, skip any starchy sides and enjoy as is.
