Make these tender baked apple fritters for a comforting breakfast or simple dessert. They feature fresh apples and warm spices, topped with a sweet apple cider glaze, offering a lighter alternative to fried versions.

  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/2 cup milk
  • 1/4 cup melted unsalted butter
  • 1 1/2 cups peeled, cored, and finely diced apples (about 2 medium apples)
  • 1 teaspoon vanilla extract
  • For the Glaze: 1 cup powdered sugar
  • 2 tablespoons apple cider
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 375 degrees Fahrenheit. Lightly grease a standard 12-cup muffin tin or line it with paper liners.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate medium bowl, whisk the egg, milk, melted butter, and vanilla extract until combined.
  4. Pour the wet ingredients into the dry ingredients. Mix gently until just combined; do not overmix the batter.
  5. Fold in the diced apples using a spatula until they distribute evenly throughout the batter.
  6. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  7. Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean.
  8. While the fritters bake, prepare the glaze. In a small bowl, whisk together the powdered sugar, apple cider, and vanilla extract until smooth. Add more cider, one teaspoon at a time, if the glaze is too thick.
  9. Remove the fritters from the oven and let them cool in the pan for 5 minutes.
  10. Transfer the warm fritters to a wire rack. Drizzle the apple cider glaze generously over the tops of the fritters while they are still warm.
  11. Serve warm or at room temperature.

Notes

  • For a stronger apple flavor in the glaze, use apple butter instead of some of the apple cider.
  • You can use Granny Smith or Honeycrisp apples for the best texture in the baked goods.
  • If you do not have muffin tins, you can drop spoonfuls of batter onto a baking sheet lined with parchment paper, but baking time may vary slightly.
