Make this easy bacon wrapped shrimp appetizer for your next gathering. This recipe uses an oven baking method to achieve perfectly crispy bacon around juicy shrimp, finished with a sweet and slightly spicy honey-chipotle glaze.

  • 1 pound large shrimp (21/25 count), peeled and deveined
  • 1 pound thin-cut bacon, cut in half crosswise
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • For the Glaze:
  • 1/4 cup honey
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon chipotle powder
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit. Line a baking sheet with foil and place a wire rack on top of the foil.
  2. Pat the shrimp completely dry using paper towels. This step helps the bacon crisp up.
  3. In a medium bowl, toss the dried shrimp with olive oil, salt, and pepper.
  4. Take one half-piece of bacon and wrap it around each shrimp, securing the end with a toothpick if necessary. Place the wrapped shrimp on the prepared wire rack.
  5. Bake for 15 to 18 minutes, turning the shrimp halfway through, until the bacon is starting to crisp.
  6. While the shrimp bakes, prepare the glaze: Whisk together the honey, apple cider vinegar, chipotle powder, and garlic powder in a small bowl.
  7. Remove the shrimp from the oven. Brush the honey-chipotle glaze generously over the top of each shrimp.
  8. Return the shrimp to the oven and bake for another 3 to 5 minutes, or until the bacon is fully crisp and the glaze is bubbly. Watch closely to prevent burning.
  9. Remove from the oven and let cool for a few minutes before serving. Serve immediately as a party shrimp recipe.

Notes

  • For the crispiest bacon, use thin-cut bacon. If you only have thick-cut, you may need to increase the initial baking time.
  • If you prefer a broiled bacon wrapped shrimp finish, place the shrimp under the broiler for 1 to 2 minutes after glazing, watching constantly to avoid scorching the sugar in the glaze.
