  • 1 pound thick-cut bacon, diced
  • 1 large yellow onion, thinly sliced
  • 1/2 cup strong brewed coffee
  • 1/4 cup apple cider vinegar
  • 1/4 cup packed brown sugar

Instructions

  1. **Make the Bacon Jam:** In a large skillet over medium heat, cook the diced bacon until crisp. Remove bacon with a slotted spoon and set aside, leaving about 2 tablespoons of rendered fat in the skillet.
  2. Add the sliced onion to the skillet and cook in the bacon fat until soft and deeply caramelized, about 15 to 20 minutes.
  3. Return the cooked bacon to the skillet. Add the coffee, vinegar, brown sugar, and Worcestershire sauce. Bring to a simmer, then reduce heat to low. Cook uncovered for 30 to 40 minutes, stirring occasionally, until the liquid has reduced to a thick, syrupy glaze. Mash slightly with a fork if you prefer a smoother texture. Set aside to cool completely.
  4. **Prepare the Burger Filling:** In a bowl, combine the ground beef, salt, and pepper. Cook the beef in a skillet over medium-high heat until fully browned. Drain off any excess grease.
  5. Stir the cooked ground beef with the chopped onion, ketchup, mustard, and pickle relish. Cook for 2 minutes until heated through. Remove from heat and let cool slightly.
  6. Once the meat mixture is cool enough to handle, stir in the shredded cheddar cheese until just combined.
