Make these fun and flavorful Bacon Cheeseburger Egg Rolls for a unique appetizer or game day snack. This recipe combines ground beef, bacon, and cheese inside a crispy wrapper.

  • 1 pound ground beef (80/20 recommended)
  • 8 slices bacon, cooked crisp and crumbled
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup finely chopped yellow onion
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 24 egg roll wrappers
  • 1 large egg, beaten (for sealing)
  • Vegetable oil, for frying (about 4 cups)
  • 1/2 cup ‘Special Sauce’ (see Notes)

Instructions

  1. Cook the ground beef in a skillet over medium heat until fully browned. Drain off all excess grease.
  2. Return the beef to the skillet. Add the crumbled bacon, chopped onion, ketchup, mustard, Worcestershire sauce, garlic powder, salt, and pepper. Cook for 3 minutes, stirring well to combine the flavors.
  3. Remove the skillet from the heat. Stir in the shredded cheddar cheese until it is melted and incorporated into the meat mixture. Let the filling cool completely before assembling the egg rolls.
  4. Set up your assembly station: place the cooled filling, the stack of egg roll wrappers, and the beaten egg (egg wash) nearby.
  5. Place one egg roll wrapper on a clean, dry surface with one corner pointing toward you (diamond shape). Brush all four edges lightly with the egg wash.
  6. Place about 2 tablespoons of the cooled filling near the bottom corner.
  7. Fold the bottom corner up over the filling. Fold the left and right corners inward over the filling.
  8. Tightly roll the wrapper away from you until you reach the top corner. Moisten the final corner with egg wash to seal the roll securely. Repeat with remaining filling and wrappers.
  9. Heat about 3 inches of vegetable oil in a deep pot or Dutch oven to 350 degrees Fahrenheit.
  10. Carefully place 3 or 4 egg rolls into the hot oil, ensuring you do not overcrowd the pot. Fry for 3 to 4 minutes, turning occasionally, until they are golden brown and crispy.
  11. Remove the cooked egg rolls with a slotted spoon and place them on a wire rack lined with paper towels to drain excess oil.
  12. Serve the Bacon Cheeseburger Egg Rolls immediately with your favorite dipping sauce.

Notes

  • For the Special Sauce: Mix 1/4 cup mayonnaise, 2 tablespoons ketchup, 1 tablespoon sweet pickle relish, and 1 teaspoon yellow mustard. This complements the cheeseburger flavor well.
  • To Air Fry: Preheat your air fryer to 375 degrees Fahrenheit. Lightly spray the assembled egg rolls with cooking spray. Cook for 8 to 10 minutes, flipping halfway through, until golden brown and crisp.
  • To Bake: Preheat your oven to 400 degrees Fahrenheit. Place rolls on a baking sheet, spray lightly with oil, and bake for 15 to 18 minutes, flipping halfway.
