Make this refreshing and crunchy apple salad featuring crisp Honeycrisp apples and a light, tangy yogurt dressing. It is a perfect side dish or quick lunch that tastes like home.

Ingredients

Scale
  • 3 large Honeycrisp apples, cored and chopped
  • 1 cup celery, chopped
  • 1/2 cup pecans, toasted and roughly chopped
  • 1/4 cup dried cranberries
  • 1/2 cup plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 1 tablespoon honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice
  • Pinch of salt

Instructions

  1. Prepare the apples: Core and chop the Honeycrisp apples into bite-sized pieces. Place them in a large bowl.
  2. Add the vegetables and nuts: Add the chopped celery, toasted pecans, and dried cranberries to the bowl with the apples.
  3. Make the creamy yogurt dressing: In a separate small bowl, whisk together the Greek yogurt, mayonnaise, honey, vanilla extract, lemon juice, and salt until smooth.
  4. Combine: Pour the dressing over the apple mixture. Gently fold all ingredients together until the apples and other components are evenly coated.
  5. Serve: Serve this refreshing apple salad immediately for the best crunch, or chill for 15 minutes before serving as a potluck side dish or quick lunch.

Notes

  • For extra sweetness, you can use candied pecans instead of plain toasted pecans.
  • If you prefer a tangier dressing, substitute half of the Greek yogurt with sour cream.
  • This salad works well with other crisp apples like Fuji or Gala if Honeycrisp is unavailable.
  • This recipe is a great base; feel free to add shredded carrots or a small amount of crumbled feta cheese for variation.
