  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1 1/4 cups milk
  • 1 egg
  • 3 tablespoons melted butter, plus more for the griddle
  • 1 teaspoon vanilla extract
  • 1 cup peeled, cored, and finely diced fresh apple
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Maple syrup, for serving

Instructions

  1. In a large bowl, whisk together the flour, baking powder, salt, and sugar.
  2. In a separate bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix. A few lumps are fine for fluffy pancakes.
  4. In a small bowl, toss the diced apples with the cinnamon and nutmeg. Gently fold the seasoned apples into the batter.
  5. Heat a lightly buttered griddle or large non-stick skillet over medium heat.
  6. Pour 1/4 cup of batter onto the hot griddle for each pancake. Cook for 2 to 3 minutes per side, until golden brown and bubbles appear on the surface. Flip and cook the second side until done.
  7. Serve the warm apple pancakes immediately with extra butter and maple syrup.

Notes

  • To prevent apples from sinking, toss them in a tablespoon of the dry flour mixture before folding them into the wet batter.
  • For a richer flavor, use buttermilk instead of regular milk.
  • If you prefer thinner pancakes, add 1 to 2 extra tablespoons of milk to the batter.
