  • 1/2 teaspoon fine sea salt

Instructions

  1. Slice the potatoes very thinly, aiming for 1/16 inch thickness. Use a mandoline slicer for uniform slices.
  2. Place the sliced potatoes in a large bowl and cover them completely with cold water. Soak for at least 30 minutes to remove excess starch. This step is key for maximum crispiness.
  3. Drain the potatoes and rinse them under cold running water until the water runs clear.
  4. Dry the potato slices thoroughly. Spread them on clean kitchen towels or paper towels and pat them completely dry. Moisture prevents crisping.
  5. In the bowl, toss the dry potato slices with 1 teaspoon of oil, salt, and pepper until lightly coated.
  6. Preheat your air fryer to 350°F (175°C).
  7. Place the seasoned potato slices in the air fryer basket in a single layer. Do not overlap them; work in batches if necessary. Proper layering is essential for even cooking.
  8. Air fry for 12 to 18 minutes, shaking the basket gently every 5 minutes. Watch closely after the 12-minute mark.
  9. The chips are done when they are golden brown and firm to the touch.
  10. Remove the chips immediately and let them cool on a wire rack for 5 minutes. They will crisp up further as they cool.

  • For Ranch seasoning variation, toss chips after cooking with 1 teaspoon of dry Ranch seasoning mix.
