Make quick, portable French toast using your air fryer. These muffins have a crispy cinnamon sugar coating and a soft center, perfect for easy mornings.

  • 1 cup milk (any kind)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 4 slices thick bread, cut into 1-inch cubes
  • 1 tablespoon melted butter, plus extra for greasing
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon (for coating)

Instructions

  1. Lightly grease a standard 6-cup muffin tin with melted butter or cooking spray.
  2. In a medium bowl, whisk together the milk, eggs, vanilla extract, 1/2 teaspoon cinnamon, and nutmeg until combined.
  3. Add the cubed bread to the milk mixture. Gently toss to coat all the bread pieces. Let the mixture sit for 10 minutes so the bread soaks up the liquid.
  4. While the bread soaks, prepare the coating: In a small, shallow dish, mix the granulated sugar and 1 teaspoon of cinnamon.
  5. Preheat your air fryer to 350 degrees Fahrenheit for 3 minutes.
  6. Lightly brush the tops of the soaked bread cubes in the bowl with the 1 tablespoon of melted butter.
  7. Spoon the soaked bread mixture evenly into the prepared muffin cups, filling each about three-quarters full. Do not pack them down tightly.
  8. Carefully place the muffin tin into the air fryer basket.
  9. Air fry for 10 to 12 minutes, or until the tops are golden brown and set. Cooking time varies by air fryer model.
  10. Remove the muffin tin from the air fryer. Immediately invert the muffins onto a cooling rack.
  11. While the muffins are still warm, gently roll or sprinkle the tops generously with the cinnamon sugar coating.
  12. Serve warm for the best texture.

Notes

  • For a crispier exterior, you can lightly spray the tops of the muffins with cooking spray before coating them in cinnamon sugar.
  • If you do not have a muffin tin that fits your air fryer, you can cook these in batches directly in the air fryer basket, forming them into small mounds, but the shape will be less uniform.
  • Use day-old bread for the best texture, as it absorbs the custard better without becoming too mushy.
